When considering buying a cheese making kit it is important to consider what type of milk you have access to. Normally pasteurised shop milk is usually a bit over-pasteurised and this does not relate well to some cheese types, like mozzarella, which also gets al lot more heat during the manufacturing process – so sometimes the mozz will not stretch well, because of this. Long-life milk is a no-no for most cheese types, since rennet usually does not curdle it, since the milk protein has been denatured to a large extent, and the rennet does not “recognise” it anymore. Smooth cottage cheese will work with most milk, since it is an acid set, or mostly acid set product.
I find for neophytes it is best to start with a cheese that is ready to eat quickly, since no-one wants to make their first cheese and then wait months to eat it, I like to sell starter kits that make cheese like feta, cottage, halloumi and mozzarella. They then learn the principles and can then progress with confidence to harder cheese types that need longer maturation under controlled conditions. Also important is that you do not buy extensive kits for hard cheese types to start with – only to discover that cheese making is not for you. You will never get the original value of the equipment back. Start with the minimum and then build up your equipment and other gear over time.

Make sure that you write everything down during your first cheese making experience – so even though you have a recipe at hand, be sure to also make notes on the recipe, should something not be clear – you will be glad that you did when you are home and making cheese on your own. With cheese making it is important that you follow the recipe to the letter the first time and then on evaluating your cheese you can make one change at a time – document it well, and then see if the following outcome was as you expected. Don’t change too many variables at once – otherwise you will not know which ones worked and which not.
